Peruvian Walnut is native to Southern Mexico, Central, and South America. It is similar to Black Walnut, but is darker in color. When finished it can be a dark chocolate brown or almost black. The grain pattern is typically straight, and not as figured as Black Walnut. I love using it when I want to have more contrast when combined with other woods.
Birch is widespread throughout North America. There are many species of Birch. The bark of all birches is characteristically marked with long, horizontal lenticels and often separates into thin, papery plates, especially upon the paper birch. Distinctive colors give the common names grey, white, black, silver and yellow birch to different species.
Bubinga, also called African Rosewood, is grown in equatorial Africa. It is a durable hardwood that ranges in color from pinkish red to a darker reddish brown, and may contain black streaks. It is 100% harder than Red Oak. I don’t use it often in cutting boards except for thin accent strips because it is so hard it could dull knives prematurely.
Canarywood is a highly durable hardwood that grows from Panama to southern Brazil. The heartwood of the tree can have a wide variety of color running through it from a pale yellow-orange to a darker reddish brown, usually with darker streaks throughout.
